Got Mush-room for Soup? #WWBack2Best
I haven’t done a Weight Watchers update for a week or so but the good news is I am still losing weight! So far after 4 weigh-ins I have lost 6lb, not setting the world alight I know but it’s 6lb in the right direction and I am very pleased. I have found that using my weekly points on top of the daily ones actually really help – at first I was nervous to use these – I only tend to use at the weekends and for a little treat.
The last 2 weeks I have been less than organised, last week hubby was away all week and this week he is on late shifts. When I am home alone in the evenings I rarely can be bothered to cook and waste the night sat at my laptop! To try and combat this I have been making up some big batches of soup so that I can easily warm a bowl up at tea time. I spotted a new one in the October Weight Watchers Magazine for Mushroom soup and it is surprisingly filling yet only 1 ProPoint. Here’s the recipe:
Mushroom Soup3 red onions 3 garlic cloves 3 punnets mushrooms 2 tbsp low salt soy sauce 2 beef stock cubes
Fry the chopped onions and garlic in calorie controlled cooking spray, add the rest of the ingredients and fill the pan with water. Boil for about an hour and then blend to a smooth thick soup!
As promised my top food tip this week is Warburtons Sandwich Pittas – these are huge round pitta pockets but only 4 ProPoints each! I have been using these during the day as a really filling sandwich – sliced in half then filled with shredded seafood sticks, sliced cucumber, red pepper and seafood sauce.
In the evening for one of my very quick teas I have sliced them into 2 rounds and made my own pizza with some passata, wafer thin ham and a sprinkle of cheese, they only take a few minutes under the grill. J has loved having them as his own special pizza too!
