Feeling fruity in the morning?
Part of the #PrincesBrekkie campaign we are taking part in is all about getting some of your 5 a day into breakfast time. I’m not big on breakfast and never have been so the only fruit that ever gets near it is freeze dried and included in a box of cereal!
Since taking delivery of our Princes Breakfast hamper I have been trying to rectify this and having fruit juice and smoothies in the morning, but try as I might I just couldn’t get my head around tinned fruit at that time, especially when time is always so precious first thing.
My solution? Fruity Flapjack!
- Melt 50g marg/butter and 3 tblsp honey in a pan
- Mix 175g porridge oats and 150g drained chopped tinned fruit together – we used Princes sliced peaches (chopped up)
- Add the marg & honey mixture and stir together, leave to cool for a few minutes
- Mix in a beaten egg and press into a lined tin
- Cook at 170C for about 20 mins until golden
- Slice into pieces but leave to cool in tin
- Enjoy as a breakfast on the run!
